Shane & Simple’s Chipotle Chickpeas, Sweet Potato, Green Beans, and Macaroni & Cheese
Don’t you just love how some foods complement each other?!
For over ten years, my family has been eating a mostly plant-based, oil free diet. Our bodies know what to do with food from the earth, and when we eat from the ground we really don’t have to worry about empty calories, grams of protein, and carb counting.
My husband is Shane, at ShaneandSimple.com and he cooks most evenings, but one night while he was out, one of our girls and I had to figure out what to fix for dinner.
I wanted his Chipotle Chickpea Tacos. We didn’t have the fixin’s for tacos, so we tried an unusual combination and made Shane’s Chipotle Chickpeas, Mashed Sweet Potatoes, Easy Skillet Green Beans, and The Best Vegan Mac and Cheese. The flavor combination was delicious and unexpected.
It has become one of our favorite meal combinations! And so, so easy.
Hint: If you want to take a short cut, you can just substitute the green beans and mashed sweet potatoes with a heated (low sodium, recommended) can of green beans and you can bake your sweet potato in the microwave.
